In fact, Vietnam is an incredibly diverse food environment with so many dishes. We see that in each region; there are lots of fresh ingredients as well as different cooking styles.

On the S-shaped land of Vietnam, there is a region stretching from Thanh Hoa to Binh Thuan, full of sun and wind, which always captivates visitors with its long, untouched beaches and a remarkably rich and refined cuisine. From the elaborate and luxurious royal dishes of Hue to the simple, rustic meals closely tied to the hardworking lives of coastal people, each dish carries its own unique flavor and story, together creating a diverse culinary map of Central Vietnam.

Every year, as the final days of April approach, the characteristic dry heat along with the stuffy atmosphere of Saigon seems to gradually envelop the entire city. From early morning, the rays of sunlight have already filtered through every corner of the streets, illuminating everything brightly. Interwoven with those patches of sunlight, the red flags with yellow stars flutter vividly in the morning sun.

When mentioning Vietnam, tourists cannot help but admire the visually appealing and delicious street food such as steaming hot bowls of pho or crispy banh mi filled with abundant ingredients. If someone were to ask me what I like about Vietnam, I wouldn't hesitate to tell them, "I love my country's cuisine." Indeed, I would show them pictures of simple street food stalls or simply invite them to a warm family meal. I'm sure that for me and for other Vietnamese people, we share the same sentiment.

During these days, the final days of the twelfth lunar month in Vietnam come to a close, and the atmosphere changes. There isn’t any kind of sudden change: it’s just a morning in which you wake up to slightly fresher air, a few buds just starting to bloom on the branches, and you listen more to talk about the Lunar New Year in your conversations and plans.
